Sunflower Lecithin has Phosphatidyl Choline, the most abundant phospholipid in the cell membrane. It also naturally abounds in Phosphatidyl Inositol, Phosphatidyl Ethanolamine, and essential fatty acids. Lecithin aids in emulsifying fats, enabling them to be dispersed in water.

Sunflower Lecithin is Soy-Free and Non-GMO. Lecithin is a natural, fatty substance that’s an integral component of cell membranes. It’s comprised of various biochemicals including essential fatty acids, as well as phospholipids and phosphatides such as phosphatidyl choline and phosphatidyl serine. Phosphatidyl choline is a major component of the brain and nervous system.

As lecithin helps breakdown fats and cholesterol, this keeps these substances moving rather than accumulating on artery walls. The main ingredient, lipoproteins are mainly responsible for this action. Lecithin also helps support nervous system, heart and kidneys.

Will depend on each particular application, use levels for a W/O emulsion are 1-5% of the fat.

Sunflower Lecithin Powder - Hydrophobic powder lecithin is more hydrophobic than liquid lecithin.  It binds better to fat.  It keeps a small amount of water.  It is used for "Water in Oil" emulsions.

Sunflower Lecithin Liquid has a more hydrophilic nature than powder lecithin. It binds better to water.  It keeps a small amount of fat suspended in large amount of liquid.  It is used for "Oil in Water" emulsions.
